Our bartenders work with ingredients from different worlds — from makrut lime, galangal, pandan and Thai palm sugar to edible grub, cucumber brine, bread and blue cheese — exploring how something unconventional can become surprisingly familiar when treated with the right technique.
The goal is never to be unusual simply for the sake of it.
